    Some say bleu cheese is an acquired taste. I first acquired it as a kid immediately when I first tasted it. My family lived in Rantoul, IL, and once a week we would drive down to Champaign-Urbana (this was in the '60s, it is now known as Urbana-Champaign) and go to a restaurant called "The Italian Village". They had excellent pizza, but they also had a very good salad with Roquefort dressing. For those of you who don't know, Roquefort is made from goat's milk but with the same culture as Bleu Cheese. Some people out there think they know better, and say it's the same thing. They're just wrong, but I like both very much.
